Last week, we put some Toronto community members’ culinary skills to the test with a disaster dining challenge. One of the contestants, Chief of Emergency Management Ontario, Dan Hefkey shared with us these yummy recipes with canned crab for when you are in a pinch. We thought they would be perfect for Food Friday. Thanks for sharing them Dan!
Crab Salad Tacos
1 1/2 cups canned corn kernels – drained
1 lb. canned crab
1 jar, mild salsa
12 corn tortillas
Combine all ingredients besides cilantro and tortillas in a medium bowl. Fill each taco with about 1/3 cup crab salad.
Crab Meat Salad
1 can mandarin oranges, drained
1 can peaches, drained
2 tbsp. lemon juice
2 cans crab meat
Mix together first 5 ingredients; add crab meat.
Mix together a dressing of lemon juice, vegetable oil, salt and pepper and add to salad.
